Bison Meat Increasingly on the Menu

The dilemma in Montana with the wandering bison, comes as bison meat surges in popularity. Prices have increased, and some stores are reporting shortages.

Rancher Hugh Fitzsimmons raises buffalo (or bison) on family land southwest of San Antonio. As a former history teacher, he likes to think about the days when buffalo covered the state of Texas, and most of the Great Plains. ""I think it's an idea whose time has come back," Fitzsimmons said.

As now this native food source is showing up on plates of modern Americans, like Gustavo and Lisette Espinosa.

Gustavo said, "I’ve heard a lot of good things about it, it's healthier, leaner, they're not injected with growth hormones and stuff like that, so we’re just going for healthier meat.” Lisette added, "We make it with spaghetti, with burgers, with tacos, you can do whatever you want with it."
