Keeping up with food trends is crucial to offering customers the right menu.

That’s why many restaurateurs turn to the National Restaurant Association to help them stay on top of the hottest menu trends. In the latest survey, the NRA quizzed 1,800 professional chef members of the American Culinary Federation and the result for was that ‘locally sourced meat’ was No. 1 menu trend for main dishes.

This is no surprise for many Texas restaurants which have enjoyed great success offering bison meat predominately sourced by Texas bison producers. Working together with local bison ranchers, Texas restaurants are delighting diners with great selections of buffalo burgers, tasty tenderloins, mouth-watering rib-eyes and many more flavorful dishes, all of which deliver a taste of Texas.

“Bison is definitely growing in popularity, and in a society moving toward healthier diets, now is a perfect time to add bison to your diet,” says Ana Salame, events manager at Ransom’s Steakhouse & Saloon , a true Texas country-style steakhouse located in Montgomery, Texas.

Ransom’s is just one of hundreds of restaurants across the Lone Star State that are offering a variety of entrees that include bison meat. Not only is offering Texas bison an economic win-win because it supports ranchers and producers in the local communities, but it is a popular choice for diners looking for more healthier dining options.

The American Heart Association has included bison as a lean meat option on their recent brochure: An Eating Plan for Healthy Americans. The goal of the eating plan is to educate Americans about reducing the "controllable" risk factors related to heart attack and stroke. The two major risk factors for heart attack are high blood cholesterol and obesity. Reducing those risks also reduces the likelihood of a stroke.

“Once people try bison, they learn it’s a little bit sweeter than beef due to the animals being raised largely on grass,” says Dan Humphries, a bison producer from Navasota, Texas, who works closely with the Texas Wine Growers Association. “Bison is available in the same cuts as beef from cattle and can be substituted in just about any beef recipe.”

Humphies explains that bison has an extremely low fat content so it is easy to accidentally over-cook the meat your first time.

“When people are looking to try bison meat for the first time, I often encourage them to consider eating it at a restaurant,” says Humphries. “We have hundreds of restaurants all across Texas that serve some wonderful bison dishes, and they do a fantastic job of giving people their first taste of bison.”

There are litterally hundreds of restaurants in Texas that serve bison, so always check the menu or ask your server. Here are just a few great places to enjoy bison entrees, burgers and more which have been recommended by individual members of the Texas Bison Association.
